This soup is fast to make and warms you up on a cold day.
One large onion
Sundried tomatoes / about 6
1/2 table spoon of each juniper berries, red peppercorn, and currants...
Large dash of sea salt
Sauté 3-4 cloves of garlic in untoasted sesame oil for a few min. Add large dash of mirin.
Add chopped sundries tomatoes, juniper berries, sea salt, red peppercorn, and currants...
Add sliced onion and sauté for a few minutes
Add 3 cups of water and simmer for 15 min
Add 1 can of beans (white kidney or cannellini)
Simmer for an additional 10-15 min.
Add large table spoon of white miso - or you can use a dark miso if you want a more salty and dense taste instead
