I love paté as a snack treat, but also prefer to be vegan, so this paté gives me both the hearty taste I remember from my childhood, and it let's me stick with my preference for healthy choices. Served with a rice cracker.
INGREDIENTS:
1/2 cup lentils uncooked (green french) - serves 3-4
1 cup walnuts
1 teaspoon mix ground peppercorn
1 teaspoon dried rosemary leaves
1 dried shiitake mushroom
3-4 cloves of garlic
Add before blending
1/2 Teaspoon sea-salt
1 tablespoon of fresh thyme
HOW TO:
Cook the lentils in a pot - 1/2 cup lentils to 1 1/2 cup of water.
Add the ingredients above except the walnuts when cooking.
Bring to a boil and then lower to a simmer for 25 min. Check if all the water is gone and if they are soft or if they need to cook longer.
When the lentils are finished - make sure they are well cooked since you will be making them into a paste.

1/2 cup cooked lentils
1/4 cup walnuts
1 teaspoon fresh thyme
1 clove garlic
