These roasted carrots are not only amazing but they also give a "jus" that is even more amazing.
INGREDIENTS:
Carrots : Whole
Mandarins : Cut into wedges and one as juice
Prunes : Scattered
Rosemary : Fresh chopped
Star of anis: 3 cracked into small pieces
Salt and pepper
Oil to start (un-toasted sesame oil if you cook @425 degrees - otherwise cook at 350degrees if you use olive oil)
water in bottom as you cook 1/4 cup at a time
HOW TO:
Wash and scrub or peel the carrots but leave them whole...you can cut them into chunks if you prefer.
Add everything to a baking dish and pour a little water in the bottom of the pan. Sprinkle sea-salt, fresh ground pepper, and thyme. Drizzle with un-toasted sesame oil. If you use olive oil then bake them at 350 degrees max. Otherwise you can pre-heat the oven to 425 degrees and expect to have the carrots in for 45-60 min. depending on size and how roasted you like them.
Every 15 min. add 1/4 cup of water to the baking dish.
