Butternut squash 1/2 works for about 2-4 people depending on how many other dishes you are serving with it.
1 whole large red onion
untoasted sesame oil
Cut into wedges of butternut and red onion in a baking pan
Drizzle with sea salt, dried thymes, and oil
Bake 45-55 min. depending on the size of the cubes @425 degrees
Garnish with fresh rosemary
